The couscous itself is safe for dogs, but leaving it out for 8 hours is the problem. Cooked grains left at room temperature can grow bacteria like Bacillus cereus, which can cause vomiting and diarrhea. Since your dog is large, a single bowl may just cause a mild stomach upset, but you should still monitor him. Withhold food for a few hours to let his stomach settle, then offer a bland diet like boiled chicken and rice. If he shows signs like repeated vomiting, severe diarrhea, or lethargy, call your vet. In the future, store leftovers in the fridge promptly.
