Plain cooked potato (no skin, no salt or butter, no green parts) is safe and easy to digest in small amounts. Raw potatoes and the green skin, eyes or sprouts contain solanine, which is toxic and can cause vomiting, diarrhoea and nervous signs. If the potato is green or sprouting, do not feed it to your dog — or yourself.
