Short answer

Olives often hide in Mediterranean salads, pasta salads, pizza toppings, and antipasto platters. The bigger risks are the brine, garlic, onions, or excessive salt and oil they’re packed with, not the olive itself. A single pitted olive from your salad is unlikely to cause harm, but a dog scavenging a whole container of marinated olives could get salt poisoning or an upset stomach. Always check your leftovers and keep such dishes out of reach, offering only the rare plain, rinsed, and pitted olive as a treat.

Olives is not poisonous to dogs, but it is easy to over-feed. Rich fat, salt or seasoning can bring on vomiting or diarrhoea within a day, and repeated large portions are a recognised trigger for pancreatitis.
