Short answer

It's not ideal to give vanilla extract daily to a senior dog. The alcohol in the extract adds up over time and can irritate the gut or affect the liver slowly, especially in an older dog. Stick to a tiny drop once in a while, or use a scraped vanilla bean instead. Watch for vomiting, diarrhea, or lethargy, and call your own vet if anything seems off.

Vanilla extract is not poisonous to dogs, but it is easy to over-feed. Rich fat, salt or seasoning can bring on vomiting or diarrhoea within a day, and repeated large portions are a recognised trigger for pancreatitis.
